Benefits of Gelatin on Mood

Gelatin is the star ingredient in gummies! It’s an incredible source of glycine, an important amino acid for our brain and mood health. Glycine is mostly found in bone broth, collagen and gelatin in our diets.

Calm Mood Matcha Gummy Recipe

These gummies make it fun and easy to get this mood-supportive amino acid into our diet! You can try different flavors, like apple juice or hibiscus tea as the base, instead of water and matcha. I like using matcha tea because it’s a natural source of l-Theanine, an amino acid that helps to calm and regulate our moods.

Ingredients:

-1 1/4 cup spring or filtered water (OR use plain coconut water for the extra potassium!!)

-2-4 TBS grass-fed gelatin (2 TBS will get you a more Jell-O like consistency, more gelatin will make it thicker and more gummy-like)

-1 cup of strong matcha tea (I like to brew a fresh cup of matcha, about 1/2 of matcha powder and 1 cup of water, blended (The brighter green the powder the higher the quality!)

-Raw honey to taste (1-2 TSP)

-Ice cube tray (silicon works best) or a small glass baking dish



Instructions:

  1. Pour the water or coconut water into a bowl, and lightly sprinkle gelatin into the liquid. It takes about 5 minutes to bloom, or rehydrate.

  2. While gelatin and water mixture starts to gel, gently heat 1 cup of matcha tea in saucepan with raw honey (tea should be steaming but not boiling)

  3. Pour the hot tea and honey into the bowl with the bloomed gelatin. You may want to use a high-speed blender, otherwise a fork works well

  4. Pour into molds once at room temp (Or you can use a small glass baking dish and just cut into squares after it cools!)

  5. Let set in fridge about 30 mins to an hour, pop out of the molds and enjoy! Should last up to 4 days in the fridge. You can eat 1-2 before bed to help with a restful sleep, or eat as a calming snack between meals!
